Baked Chicken Legs and Thighs

Meat:

Chicken Leg & Thigh Quarters

Seasonings:

Note: We typically don’t use measuring devices, we just add a dash of each seasoning! When the meat is halfway done, a taste test is done and if any more seasoning is needed, then it is added!!!

  • Jamaican Chicken Seasoning
  • Jamaican Chicken Rub
  • Paprika
  • Cayenne Pepper (powdered form)
  • Black Pepper
  • Garlic Powder
  • Basil Powder
  • Thyme leaves
  • Mrs. Dash Onion & Herb seasoning
  • Mrs. Dash Everything but the Salt seasoning
  • Worcestershire Sauce
  • Barbecue Sauce

Method:

  1. Preheat oven to 375 degrees
  2. Remove the skin. Clean and wash chicken.  Add a little distilled vinegar to the water as you wash the chicken.
  3. Add the spices above (except for the Barbecue Sauce) and rub them thoroughly into the chicken. Do this for about 5 minutes to make sure it is thoroughly soaked into the chicken. Cut little slits into the chicken to make sure the seasoning is soaking through.
  4. Layout chicken on the baking tray and add some water to the bottom of the baking pan
  5. Bake for 30 minutes then baste some of the liquid at the bottom of the pan over the chicken. Turn the chicken pieces over.
  6. Bake for another 30 minutes and baste some of the liquid at the bottom of the pan over the chicken. Turn chicken over.
  7. Bake for another 15 minutes.
  8. Brush the chicken with Barbecue Sauce
  9. Turn the oven settings to Broil
  10. Broil the chicken for 10 about minutes and it’s done!
